This roast, seasoned with a flavorful dry rub, is paired with a fresh pesto sauce for a delicious and unique Passover dish that can be served at room temperature.

Ingredients for the Dry Rub:

  • 1 tablespoon kosher salt

  • 1 tablespoon black pepper

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1/2 teaspoon coffee (Instant) 

  • 1/2 teaspoon cayenne pepper (optional)

For the Roast:

  • 3-4 lb boneless short ribs (French roast-style)

  • 2 tablespoons olive oil

For the Pesto Sauce:

  • 2 cups fresh basil leaves

  • 1/4 cup olive oil

  • 2 tablespoons pine nuts (or walnuts)

  • 1-2 cloves garlic

  • Salt and pepper to taste

  • 1 tablespoon nutritional yeast (optional)

  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Prepare the Dry Rub:

    1. In a small bowl, combine salt, pepper, garlic powder, onion powder, paprika, thyme, rosemary, coffee and cayenne. Rub the mixture generously over the short ribs. Let sit for 15-20 minutes.

  1. Roast the Meat:

    1. Preheat your oven to 350°F (175°C).

    2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the short ribs on all sides for about 4-5 minutes per side.

    3. Transfer the skillet to the oven and roast for 1.5 to 2 hours, or until the internal temperature reaches your preferred doneness (130-135°F for medium-rare).

    4. Remove the roast from the oven and rest for 15-20 minutes before slicing.

  1. Make the Pesto:

    1. In a food processor, combine basil, garlic, pine nuts, nutritional yeast (optional), salt, and pepper. Pulse a few times to chop.

    2. Slowly add olive oil while processing until smooth.

    3. Taste and adjust seasoning with lemon juice, salt, or pepper.

  1. Serve:

    1. Slice the French roast against the grain into thin strips. Serve at room temperature with a generous drizzle of pesto sauce on top, or on the side for guests to add.
