Beef Chuck Roast with Prunes, Chestnuts, and Wine

Ingredients:

  • 3-4 lb beef chuck roast

  • 1 cup prunes, pitted

  • 1 cup chestnuts, peeled (canned or pre-cooked)

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 cup red wine (kosher for Passover)

  • 2 cups beef broth (kosher for Passover)

  • 2 tablespoons olive oil

  • 1 tablespoon fresh thyme leaves

  • 1 tablespoon fresh rosemary, chopped

  • Salt and pepper to taste

  • 2 tablespoons honey (optional)

Instructions:

  1. Preheat the oven to 325°F (160°C).

  2. Sear the roast: Heat the olive oil in a large, oven-safe pot over medium-high heat. Season the beef chuck roast generously with salt and pepper. Sear the roast on all sides until browned (about 4-5 minutes per side). Remove the roast and set it aside.

  3. Sauté onions and garlic: In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes, until softened and fragrant.

  4. Deglaze with wine: Add the red wine to the pot, scraping up any browned bits from the bottom. Let the wine reduce by half (about 5-7 minutes).
